Thank you for choosing Sakari Farms hot sauce. We grow all of the ingredients on our farm in Tumalo, OR. We love flavor and our sauces pack a ton of it.
What’s with the name? Well, sometimes we just have to do something a little off the cuff. This hot sauce is our first of the season using the large quantity of fresh garlic scapes we harvest in early summer. This is a 40 day fermented sauce that includes Garlic Scapes, local Peaches, a hearty mix of superhot peppers including Carolina Reapers, Ghost Pepper, Scorpion, Scotch Bonnet and Onions. After the ferment we blend it with freshly harvested Basil and Apple Cider Vinegar.
It has a peachy garlic aroma and blends with everything we have tried it on. The fermentation dulls the sharp heat you would get from fresh peppers and gives the sauce a bigger body with more umami flavor. Don’t think this one isn’t hot though, it will make your nose run no problem.
